This is a recipe that is great for lunch or dinner or a quick meal to put together to take with you to share at a party. Use with leftover turkey or you can substitute chicken, if you prefer.
Turkey Burrito Bowl
To make this dish nightshade-free, delete the tomato, chili powder and salsa verde. For a nightshade free salsa, use the Peach Mango Salsa recipe.
Ingredients
- 1 pound ground, chopped or shredded turkey
- 1 tablespoon coconut oil
- ½ onion, diced
- 1 teaspoon cumin
- 1-2 teaspoons chili powder
- 1 teaspoon dried oregano
- ¼- 1/2 teaspoons garlic powder, to taste
- ½ teaspoon sea salt, to taste
- ¼- 1/2 teaspoons black pepper, to taste
- 1 tomato, diced (optional)
- 1 avocado, sliced
- 2 cups lettuce, chopped
- ¼- 1/2 cups salsa verde, or Peach Mango Salsa
- ½ cup raw sunflower seeds, preferably soaked and dehydrated (optional)
- Optional, ½ cup cheese or dairy-free cheese, grated (for dairy-free)
Instructions
- Saute the onion in a saute pan over medium heat with the coconut oil. Cook until soft, about 8 minutes.
- Add the turkey meat, herbs, spices, salt and pepper. Stirring frequently, use a spatula to break up the turkey meat until it is cooked through, about 10-15 minutes. Remove from heat.
- Meanwhile, prepare the vegetables. Make the burrito bowl by layering lettuce, then turkey meat, tomatoes, avocado, salsa, sunflower seeds and optional cheese.
