Just a quick share today. It was another great day at the CSA. As I said previously, I am part of two CSA programs and this one I only get a medium share so it’s less in the total amount of produce but it helps stretch things through the week. Midweek we are usually running low on greens. So this is the perfect time for a “refill.” This weeks’ haul included 2 heads of lettuce (I traded in the chard for a second head of lettuce because we’re not really chard eaters), a bunch of kale, spring onions and spinach.
I have it all worked out for the remainder of the week. I will make my family favorite spinach salad with scallions (YUM – with real bacon), lettuce and the remaining veggies we have in the crisper for regular salads and the kale for our morning smoothies. That fits perfectly for the rest of the week and then the other CSA will fill in the remaining veggies for the week’s meals.
We are very fortunate to have local CSAs so close to use that we can participate in more than one. But the idea of local farms have become a thing of the past. We need to make it a higher priority to bring back organic farming as a noble and cherished occupation where farmers can make a decent living and have the same kind of federal support that major industries have for farming GMO crops.
