Jennifer Knollenberg is a nutritional consultant and recipe developer at one of the leading low-carbohydrate diet companies in the United States. She holds a master’s degree in chemistry and has done advanced studies in food science.
Having always enjoyed baking, Jennifer became a pastry chef in 2008 and began teaching pastry-making and cooking courses. She has Hashimoto’s thyroiditis and struggles with prediabetes. She feels passionate about helping people with sugar sensitivities eat well. Although at one time, Jennifer had uncontrollable cravings for sweets, her recipes have helped her to manage her cravings while allowing her to live a completely sugar-free lifestyle. Jennifer lives in Boulder, Colorado, with her husband and son.
