Mushrooms are the richest source of ergothioneine, a potent antioxidant with anti-inflammatory, DNA-protective, and free-radical scavenging actions. Consuming 100 grams of white button mushrooms daily for 16 weeks has been shown to double erogthioneine concentration in the blood, helping to mitigate the risks of metabolic syndrome and obesity. Interestingly, ergothioneine levels do not decrease when when mushrooms are cooked.
