SAFFRON is one of the most expensive and sought-after spices in the world, and for this reason is often referred to as “red gold.” Mostly known for its unique aromatic taste and the golden color it gives to dishes, this spice is a good source of the mineral manganese, which is essential for immune function. Saffron’s rich antioxidant content, including crocetin and lycopene, may play a role in slowing down the process of atherosclerosis by inhibiting arterial oxidation of LDL (low density lipoprotein) cholesterol.
