Story about the recipe: This is one of my detox alternative recipes. Usually by Day 5, my clients, (myself included), are looking for something other than salad. This is a great dish to have without an additional salad. Most importantly, it is something you can feed the whole family. It is very satisfying and delicious!
Quick and Delicious Zucchini Pasta
Ingredients
- 2-3 whole zucchini
- 1 pint cherry tomatoes
- 1 clove of minced garlic
- Chopped basil
- Extra virgin olive oil
- Sea salt
Instructions
- Using a box grater, shred the zucchinis.
- Place in a colander and sprinkle with some salt in order for the zucchini to "dry." Let sit for 15 minutes to an hour.
- Chop tomatoes and basil.
- In a large saute pan, heat 2 teaspoons of oil and sweat the garlic.
- Place chopped tomato mixture in and gently combine.
- Gently stir in shredded zucchini until heated through.
- Serve immediately and enjoy with a salad.
