In Maryland, we love our Old Bay Seasoning. Old Bay Seasoning is a blend of herbs and spices made by by McCormick & Company and produced in Maryland. The seasoning mix includes mustard, paprika, celery salt, bay leaf, black pepper, crushed red pepper flakes, mace, cloves, allspice, nutmeg, cardamom and ginger. We steam our crabs and shrimp in Old Bay, we add it to soups and any other recipe where that extra punch is wanted. Today, we added it to our sweet potato fries. The sweetness of the fries and the bold flavor of the spices works so well together. Here’s the simple recipe to make them in less than a half an hour.
- 2 medium sweet potatoes
- ½ cup coconut oil, melted (or more depending on size of potatoes)
- Old Bay Seasoning
- Preheat oven to 375⁰ F.
- Peel and cut sweet potatoes into 1" strips to resemble fries.
- Melt coconut oil.
- Place cut fries into a large bowl and coat with oil.
- Spread flat on a baking sheet.
- Sprinkle liberally with Old Bay Seasoning (to taste).
- Bake in oven for 10 minutes. Then flip fries over.
- Cook on second side for another 10 minutes. Add more Old Bay, if desired.
- Remove from oven and place on paper towel to soak up any extra oil.
- Serve warm or reheat later before serving.
