One of my old favorite comfort foods was mashed potatoes before I changed the way I eat. Now, I substitute cauliflower mash and won’t ever go back to mashed potatoes. It has a much richer flavor with all of the creaminess and texture that I expect of mashed potatoes but more nutritious.
Cauliflower Mash

Ingredients
- 1 head of cauliflower, cut into florets
- ½ white onion, chopped
- 1 teaspoon extra virgin olive oil
- ½ cup shredded Cheddar cheese
- ½ lb. bacon, chopped
- ¼ cup heavy whipping cream
- Salt and pepper to taste
Instructions
- Steam cauliflower either in a steamer basket over boiling water until tender or in a steam oven.
- Meanwhile, cook onion and bacon in the olive oil until onions are tender and bacon in browned.
- Place steamed cauliflower in high speed mixer with cream.
- Blend until creamy.
- Add in remaining ingredients and blend until the consistency matches mashed potatoes.
