Given their bitter yet floral flavor, BAY LEAVES are traditionally used in marinades, casseroles and soups throughout Europe. Health benefits attributed to these aromatic leaves range from inflammation reduction to blood sugar management. For example, incorporating crushed bay leaves into food has been shown to lessen the glycemic response (the effect of a meal on blood sugar levels), which is desirable in reducing the risk of type 2 diabetes. Bay leaves offer a healthy dose of vitamins A, C, magnesium, calcium, potassium, and iron.
