You can either grill or roast your chicken. Roast the chicken in the oven at 475⁰ F. for 40-45 minutes. You can bake with the barbecue sauce directly on the chicken or just as a dipping sauce.
Serves: 6
Ingredients
  • If grilling: olive oil, for grates
  • 2 tablespoons paprika
  • 1 teaspoon dried thyme
  • Sea salt, to taste
  • Black pepper, to taste
  • 3½ pounds bone-in chicken pieces
  • 2 cups barbecue sauce, see following recipe
Instructions
  1. Heat grill to medium. Lightly oil grates.
  2. In a small bowl, combine paprika, thyme, 1 teaspoons salt, and ½ teaspoon pepper. Sprinkle spice rub all over chicken.
  3. Reserve 1 cup barbecue sauce in small bowl for serving. Keep remaining sauce in another bowl for basting.
  4. Grill chicken, turning often, until cooked through, 15 to 20 minutes (if browning too quickly, move to cooler part of grill).
  5. During final 5 minutes of cooking, baste chicken with barbecue sauce. Serve chicken with reserved sauce.
