To make this dish nightshade-free, delete the tomato, chili powder and salsa verde. For a nightshade free salsa, use the Peach Mango Salsa recipe.

Ingredients
  • 1 pound ground, chopped or shredded turkey
  • 1 tablespoon coconut oil
  • ½ onion, diced
  • 1 teaspoon cumin
  • 1-2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • ¼- 1/2 teaspoons garlic powder, to taste
  • ½ teaspoon sea salt, to taste
  • ¼- 1/2 teaspoons black pepper, to taste
  • 1 tomato, diced (optional)
  • 1 avocado, sliced
  • 2 cups lettuce, chopped
  • ¼- 1/2 cups salsa verde, or Peach Mango Salsa
  • ½ cup raw sunflower seeds, preferably soaked and dehydrated (optional)
  • Optional, ½ cup cheese or dairy-free cheese, grated (for dairy-free)
Instructions
  1. Saute the onion in a saute pan over medium heat with the coconut oil. Cook until soft, about 8 minutes.
  2. Add the turkey meat, herbs, spices, salt and pepper. Stirring frequently, use a spatula to break up the turkey meat until it is cooked through, about 10-15 minutes. Remove from heat.
  3. Meanwhile, prepare the vegetables. Make the burrito bowl by layering lettuce, then turkey meat, tomatoes, avocado, salsa, sunflower seeds and optional cheese.
