Serve this as an accompaniment with the Cinnamon Muffins.

Ingredients
  • 9-10 drops lemon essential oil
  • 1 cup coconut sugar
  • 1 stick unsalted butter, room temperature
  • 4 extra large eggs or 4 large eggs and 1 yolk
  • ½ cup lemon juice (3-4 lemons)
  • ⅛ teaspoon salt
Instructions
  1. Pour sugar and lemon essential oil into a bowl and mix until well combined.
  2. Cream the butter in a separate bowl and then beat in the lemon sugar mixture.
  3. Add the eggs, 1 at a time.
  4. Then add the lemon juice and salt.
  5. Mix until well combined.
  6. Pour the mixture into a 2 quart saucepan and cook over low heat until thickened, stirring constantly.
  7. The lemon curd will thicken at about 170 degrees F or just below simmer.
  8. Remove from the heat, cool or refrigerate.Serve with Cinnamon Muffins
